  • Overview

    Sous Chef works with Executive Chef and culinary team from menu development, production and event execution at the National Constitution Center through Brûlée Catering by Chef Jean Marie Lacroix. This position oversees culinary operations along with Executive Chef for both Delegates Café and catered events. The ideal person in this position will bring a fresh culinary perspective, innovative production techniques, and excellent organizational skills to Brûlée Catering by Chef Jean Marie Lacroix.


    • Ensures prompt, courteous, and professional service.
    • Provides exceptional communication with a high degree of professionalism and engagement...
    • Maintains an in-depth knowledge of food and event trends, operational procedures, and innovative production techniques.
    • Plans and coordinates event details with Executive Chef including but not limited to: ordering, scheduling, production, and execution.
    • Serves as an culinary lead during events to ensure that Brûlée Catering by Chef Jean Marie Lacroix standards and practices are executed.
    • Educates sales, operations, and service teams on menu items.
    • Accurately reviews event information at weekly banquet event order meetings.
    • Assists Executive Chef and General Manager in costing, forecasting and special projects.
    • Demonstrates initiative and follow through to meet and surpass expectations.
    • Works additional hours when necessary due to large volumes of business.
    • Attends monthly companywide culinary meetings setting standards in production and execution.
    • Attends meetings internally and externally as requested.
    • Adheres to established companywide policies and procedures.
    • Maintains order guides & inventory making any necessary adjustments.
    • Works with the General Manager and Executive Chef to maintain and update café, catering and custom menus.
    • Exercises care, performs required maintenance, and ensures operating instructions, safety standards, and guidelines are followed in relation to Brûlée Catering equipment and/or facility assets.


    • Education: High School graduation or GED.
    • Experience: 3 years of related culinary management experience and/or training.
    • Strong verbal, written, and interpersonal communication skills.
    • Strong competency in Microsoft Office software and accurate data entry - proficient computer skills necessary to communicate with others.
    • Strong competency in various vendor online ordering portals.
    • Ability to manage extensive amounts of information from multiple managers.
    • Strong organizational skills and diligent attention to details.
    • Exceptionally knowledgeable about food and beverage (trends, pairings, planning).
    • While performing the duties of this job, the employee is regularly required to sit, talk, or hear, use hands to touch and feel objects, tools, or controls, and reach with hands and arms. The employee is frequently required to stand and walk, sometimes for long periods. Specific vision abilities required by this job include close vision, peripheral vision, depth perception, and ability to adjust focus.


    The ideal candidate for this position will possess the following additional skills and behaviors:

    • 3 or more years of event execution experience.
    • Ability to work proactively and independently.
    • Ability to make independent decisions regarding planning, organizing, and scheduling work for self.
    • A collaborative, flexible, and team-oriented work style.
    • Sound judgment and tact in handling and maintaining confidential information and matters.
